I recently did the Dr. Oz 3 Day Juice Cleanse for a client. Because we decided to ditch the gazpacho juice and make it into a chopped salad instead, I had some left over ingredients and came up with this. One of my favs. I don’t particularly care for parsley so feel free to leave it out or substitute it with cilantro if that’s more your flavor.
