Pasta primavera! Recipe to come!
UPDATE:
Okay, so basically the recipe is this:
3 zucchinis spiralized
2 heads broccoli torn into small bits
1 tomato chopped (more if you like)
3 heads bok choy, sliced, then chopped
white onion, chopped
garlic, diced
1 cup dry brown rice/quinoa/wild rice
Directions:
Start your brown rice on the stove with garlic and onion. Bring to a boil and reduce to simmer.
While that is cooking, spiralize your zucchinis, chop your broccoli and tomato and put into a large bowl.
Slice and chop your bok choy and add it to the rice AFTER it is done cooking. It will wilt naturally with no heat, just from the steam of the rice.
After rice has cooled a bit, pick skillet up and dump contents into large bowl of vegetables.
It’s as simple as that. I made this on Monday night and had a small bowl for dinner. My fiance and I had it for lunch Tuesday, Wednesday, and Thursday with a dash of hot sauce or home made fresh salsa. Braggs Liquid Aminos will also do the trick.
